As the sun sets and the sea off the Costa del Sol begins to reflect the last golden glimmers of the day, an unmistakable aroma rises in the air: that of grilled sardines. A culinary spectacle that not only nourishes the palate, but also the spirit and the memory of a city proud of its roots.
“Espeto” is a typical dish from Malaga cuisine, consisting of skewering fish, traditionally sardines, onto thin, long canes to grill over a wood fire, usually on a boat near beach bars (chiringuitos) using the sand. The espeto technique involves inserting the sardines through their backs, ensuring they are all evenly spaced on the cane. This way, the sardines cook over the embers, requiring turning to ensure even cooking on both sides. To try the best espetos in Malaga, you should definitely seek out a traditional beach bar (chiringuito) where they are served authentically.
Gazpacho Malagueño is a unique variation of traditional Andalusian gazpacho that has won over palates with its combination of fresh flavors and creamy texture. This cold soup, typical of the province of Málaga, is the perfect dish to refresh yourself on hot summer days.
Its main ingredients are tomato, cucumber, bell pepper, garlic, bread, oil, and vinegar. It’s a drink, so it’s served in a glass. In different areas of Málaga, they also serve ‘Salmorejo,’ which is very similar but thicker and therefore eaten with a spoon. It usually contains pieces of chopped ham and hard-boiled egg.
It shouldn’t be confused with ‘Gazpachuelo,’ a typical Málaga dish that is served hot and is usually eaten in winter.

We love anchovies, but one of the best ways to enjoy them is cleaned and butterflied, seasoned with garlic and lemon, and ready to fry. Ajoblanco from Málaga is possibly the oldest and most emblematic cold soup in Andalusian cuisine. Considered the predecessor of gazpacho, this dish is a must-have on Málaga tables during June, when the heat starts to intensify and we look for fresh, nutritious, and easy-to-prepare options.
Unlike red gazpacho, ajoblanco doesn’t contain tomatoes (since its origins predate the discovery of America). Its main ingredients are basic local products: almonds, bread, garlic, water, vinegar, and extra virgin olive oil.
Besides being a refreshing recipe, ajoblanco is an excellent source of healthy fats thanks to the almonds and olive oil, providing vitamin E and essential minerals.
The freshest salad for summer. You’ve probably heard of this recipe, as there are several similar versions in other parts of Andalusia.
Very simple, it consists of boiled potatoes as the main ingredient, accompanied by other ingredients such as pitted black olives, onion, cod (which can be substituted with tuna or bonito), and orange segments (yes, orange!). It’s served cold and is ideal as a starter or as a side dish.
